  • 1/2 avocado, sliced
  • 1/2 cup mushrooms, sliced
  • 1 cup fresh spinach
  • 1 tomato, halved
  • 2 slices halloumi cheese
  • 1 tbsp olive oil
  • Salt, pepper, and chili flakes to taste
  • Optional: fresh parsley for garnish

Instructions

  1. In a non-stick frying pan over medium heat, add olive oil and fry the eggs sunny-side up until the whites are set and yolks remain runny. Season with salt and chili flakes.
  2. In another pan, heat olive oil on medium-high and sauté mushrooms for 5-7 minutes until golden brown. Season with salt and pepper.
  3. Add spinach to the mushroom pan and sauté for 1-2 minutes until wilted.
  4. Grill tomato halves and halloumi slices in a hot pan for about 1-2 minutes per side until golden brown.
  5. Arrange all components on a plate and garnish with parsley if desired.
