  • 6 eggs
  • ½ cup reduced-fat plain Greek yogurt
  • 2 ounces crumbled feta cheese
  • 2 medium sweet potatoes, peeled
  • Olive oil cooking spray
  • Heaping 1/2 tsp salt
  • 1/4 tsp crushed red pepper (optional)
  • 1/8 tsp black pepper
  • 1 to 2 roma tomatoes, sliced into rounds

Instructions

  1. Preheat your oven to 375 °F.
  2. Thinly slice the sweet potatoes using a mandoline slicer or sharp knife. Lightly grease a 9-inch pie plate and layer the sweet potato slices in a spiral pattern covering the bottom and sides. Bake for 15 minutes.
  3. In a skillet over medium heat, sauté the diced onion in olive oil until softened, about 5 minutes. Add minced garlic and spinach; cook until wilted.
  4. In a bowl, whisk together eggs and Greek yogurt until fluffy. Fold in crumbled feta cheese.
  5. Spread the sautéed spinach mixture over the baked sweet potato crust and pour the egg mixture on top. Optionally garnish with additional feta and tomato slices.
  6. Bake for about 30 to 35 minutes or until the egg mixture is set. Allow cooling for 5 to 10 minutes before slicing.
