Ingredients

Scale
  • 1 lb boneless skinless chicken breasts, cut into strips
  • ½ cup teriyaki sauce
  • 2 cloves garlic, minced
  • 1 tbsp honey
  • 1 tbsp sesame oil
  • Salt and pepper, to taste
  • 1 cup fresh pineapple, diced
  • 1 ripe pear, diced
  • ¼ cup red onion, finely chopped
  • 1 jalapeño pepper, seeded and diced
  • Juice of 1 lime
  • 2 tablespoons fresh cilantro, chopped
  • 8 small flour or corn tortillas

Instructions

  1. Marinate chicken by whisking together teriyaki sauce, minced garlic, honey, sesame oil, salt, and pepper. Coat chicken strips and refrigerate for at least 30 minutes.
  2. Preheat grill or grill pan over medium-high heat. Grill skewered pineapple for about 2-3 minutes on each side until caramelized. Remove and set aside.
  3. Grill marinated chicken for 3-4 minutes per side until thoroughly cooked and slightly charred. Let rest before slicing into bite-sized pieces.
  4. In a bowl, combine grilled pineapple, diced pear, chopped red onion, lime juice, cilantro, salt, and pepper to create salsa.
  5. Warm tortillas on the grill or skillet for about 30 seconds on each side.
  6. Assemble tacos by filling each tortilla with sliced chicken and topping with salsa.
