Ingredients
- 3/4 cup all-purpose flour
- 6 tbsp natural unsweetened cocoa powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 cup unsalted butter, room temperature
- 1/4 cup vegetable oil
- 3/4 cup sugar
- 3/4 tsp vanilla extract
- 2 large eggs
- 1/2 cup + 2 tbsp milk
- Ice Cream of your choice, softened
- 1 1/2 cups heavy whipping cream, cold
- 3/4 cup powdered sugar
- 1 1/4 tsp vanilla extract
- 12 oz semi-sweet chocolate, finely chopped
- 3 tbsp vegetable oil
Instructions
- Preheat the oven to 350°F (176°C) and line a cupcake pan with liners.
- In a bowl, mix flour, cocoa powder, baking soda, and salt.
- In another bowl, cream together butter, vegetable oil, sugar, and vanilla until fluffy. Add eggs one at a time.
- Gradually combine dry ingredients with wet ingredients along with milk until smooth.
- Fill cupcake liners three-quarters full and bake for 15-17 minutes. Let cool completely.
- Hollow out the centers of cooled cupcakes and fill with softened ice cream.
- Whip cream with powdered sugar and vanilla until stiff peaks form; pipe onto filled cupcakes.
- Optional: Dip topped cupcakes in melted chocolate coating.
