- 68 g all-purpose flour (½ cup + 1 tbsp)

Instructions
- Preheat your oven to 180°C (350°F).
- In a food processor, blend the vegan cookies into fine crumbs and mix with melted vegan butter. Press this mixture firmly into the base of a springform pan.
- Combine diced apples with brown sugar and cinnamon in a bowl, then pour over the crust.
- For the crumble topping, mix flour, brown sugar, vegan butter or coconut oil, oats, chopped nuts, and cinnamon until crumbly. Sprinkle over the apple layer.
- Blend cashews until smooth, then add silken tofu, maple syrup or sugar, vegan yogurt, lemon juice, cornstarch, vanilla extract, and salt. Pour over the crumble topping.
- Bake for about 75 minutes until set around the edges but slightly jiggly in the center. Cool at room temperature before refrigerating for at least 4 hours.
