- 3–4 tbsp agave syrup (or maple syrup/powdered sugar) (to taste)
- 1 tsp vanilla extract
- Pinch of salt
- 100 grams 70% dark chocolate
- 400g tin full-fat coconut milk
Instructions
- Blend silken tofu, peanut butter, agave syrup, vanilla extract, and salt until smooth.
- Spoon into ramekins or jars and refrigerate while preparing ganache.
- Melt chocolate using a microwave or double boiler; mix in the creamy part of coconut milk until combined.
- Pour ganache over mousse portions and chill for at least one hour before serving.
