  • ½ cup (1 stick) salted butter, softened
  • 8 oz cream cheese, softened (brick-style, not spreadable)
  • 1 teaspoon vanilla extract
  • 4 cups powdered sugar
  • Food coloring — mint green and regal purple
  • Colored sprinkles
  • Candy eyeballs

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a mini muffin tin.
  2. In a microwave-safe bowl, melt unsalted butter and semisweet chocolate chips together until smooth.
  3. Stir in cocoa powder, followed by sugars, eggs, and vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking powder, and salt. Gradually mix into wet ingredients until just combined.
  5. Fill each muffin tin cup with about 1½ tablespoons of batter and bake for 18 minutes.
  6. Create wells in the center of each brownie immediately after baking using a rounded spoon.
  7. Allow brownies to cool completely before frosting with cream cheese frosting colored as desired.
