Ingredients
- 2 large zucchinis
- 1 1/2 pounds ground beef
- 10 oz ricotta cheese
- 1 cup cottage cheese
- 24 oz pasta sauce
- 2 cups shredded mozzarella cheese
- 1/2 cup cooked spinach (squeezed dry)
- 1 teaspoon Italian seasoning
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 350ºF.
- Using a vegetable peeler, slice zucchinis into thin ribbons.
- In a medium sauté pan over medium heat, brown ground beef with Italian seasoning; drain excess fat.
- In a mixing bowl, combine ricotta cheese, cottage cheese, egg, egg yolk, and squeezed spinach until creamy.
- In a 9×9 baking dish, spread pasta sauce on the bottom. Layer zucchini ribbons, half the cheese mixture, and half the meat mixture; repeat layers.
- Finish with zucchini ribbons on top and cover with mozzarella cheese.
- Bake covered for 30 minutes; remove foil and bake an additional 15 minutes until golden brown.
- Let cool for 15 minutes before slicing.
