  • 2 large zucchinis
  • 1 1/2 pounds ground beef
  • 10 oz ricotta cheese
  • 1 cup cottage cheese
  • 24 oz pasta sauce
  • 2 cups shredded mozzarella cheese
  • 1/2 cup cooked spinach (squeezed dry)
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 350ºF.
  2. Using a vegetable peeler, slice zucchinis into thin ribbons.
  3. In a medium sauté pan over medium heat, brown ground beef with Italian seasoning; drain excess fat.
  4. In a mixing bowl, combine ricotta cheese, cottage cheese, egg, egg yolk, and squeezed spinach until creamy.
  5. In a 9×9 baking dish, spread pasta sauce on the bottom. Layer zucchini ribbons, half the cheese mixture, and half the meat mixture; repeat layers.
  6. Finish with zucchini ribbons on top and cover with mozzarella cheese.
  7. Bake covered for 30 minutes; remove foil and bake an additional 15 minutes until golden brown.
  8. Let cool for 15 minutes before slicing.
