  • 4 zucchinis
  • 1 tablespoon olive oil
  • 1/3 cup fresh ricotta cheese
  • 1 large egg (optional)
  • 1/3 cup grated parmigiano cheese
  • 1 teaspoon salt (to taste)
  • 1 cup marinara sauce
  • 1/3 cup mozzarella cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and slice the zucchinis into long strips, trimming the ends for stability.
  3. On a baking sheet, drizzle zucchini slices with olive oil and sprinkle with salt. Roast for 15–20 minutes until soft; let cool slightly.
  4. In a mixing bowl, combine ricotta, grated parmigiano, optional egg, and salt until creamy.
  5. Place about a teaspoon of filling at one end of each zucchini slice and roll tightly. Arrange in a baking dish coated with marinara sauce.
  6. Cover rolls with additional marinara sauce and sprinkle mozzarella on top. Bake for another 20 minutes until melted and bubbly.
